Menu Monday Recipe: Turkey Corn and White Bean Chili

Kate’s Turkey Corn and White Bean Chili


2 tbsp butter
2 tbsp olive oil
1 whole finely diced red onion
1/2 cup Italian dressing (I use Good Seasons)
2 pounds ground turkey
1 tbsp minced garlic
2 cans (15 oz each) great northern beans, undrained
2 cans (15 oz each) whole kernel corn, undrained
3 cups chicken broth
2 tbsp chopped fresh or 3 tbsp dried cilantro
1 tbsp chopped fresh or 2 tsp dried basil
2 tbsp chili powder
3/4 cup salsa
Salt and pepper to taste

Melt butter and oil in large pot over medium heat.
Cook onion stirring constantly until tender.
Add garlic and cook one more minute.
Add raw ground turkey and half cup of italian dressing and brown turkey throughout.
Once turkey is browned and cooked through,add broth, cilantro, basil, chili powder, salsa, beans and corn.
Bring to a boil, reduce heat to medium low for 15 minutes, stirring occasionally.

Finished Product! Yum!!!

Serve with homemade corn bread!
Serves 10, so you may want to cut recipe or freeze the rest for another night!
