Super Bowl Menu Monday!!!

Here were MY Super Bowl (menu) picks:

1. Nadine sent me a link to make these pepperoni roll ups! They were a huge hit! In fact, my kids each have one in their lunches today as well! Thanks, Nadine!

2. Barb sent me this 7 Layer Taco Dip recipe! It was fantastic! Even I could not keep my hands off of it! I made one small modification. I drained a jar of salsa and added it in on top of the tomatoes! Delicious!

7 Layer Taco Dip
1 large can refried beans
1 large container of guacamole
1 large tomatoes diced up
1 jar chunky salsa, drained
6  Greens onions chopped
1 Large bag of  mixed cheddar and colby cheesse – I used just mild cheddar
1 large (16 oz) container sour cream
1 Packet of your fav taco dip, mixed into sour cream

Directions – Layer in baking dish as you see on the list of ingredients.
Serve with tortilla chips! Enjoy!

3. Lindi sent me this link, which inspired my football brownie cake. The kids were SO impressed!

4. I made  really simple fruit fruit skewers using the football tooth picks I found at Michaels. I made a simple fruit dip to go with it:

Fruit dip
1 container of whipped topping
8 ounces of cream cheese, softened
3-4 ounces of orange gelatin powder
1 packet of fruit dip powder, optional
Mix it up.. It’s yummy!

Runner up recipe submissions – I considered using the following recipes as well-

1. Emberlee sent this recipe for

Super Bowl Meatballs (Thanks, Emberlee!)
3lbs ground turkey (93/7%)
1 large egg
1 cup breadcrumbs
1 small onion
1 garlic cloves (I use 4-5)
1 bottle your fav BBQ sauce, Jack Daniel’s Orignal Recipe works best for us
salt, pepper
And any other veggies you want to  grate up and sneak in. I’ve done carrots, broccoli, olives…make it your own! :)

Just mix everything but BBQ sauce
Add a little BBQ sauce, maybe 1/2 cup
Form meatballs & add to heated pan with olive oil or bake at 400 degrees
Cook until about 80% cooked then add to a crockpot
Add remainder of BBQ sauce, stir
Can cook on low all day so they will be warm when you want to eat them!
