Kate’s Healthy and Delicious Mediterranean Vege Wrap
1 Whole grain wrap ( I use a low carb/80-90 calorie whole wheat wrap)
2 tbsp Taboulah salad, OR 2 tbsp hummus (any flavor) spread evenly over entire wrap
Then layer the following in this order–
4-5 fresh spinach leaves
I 6inch slice of cucumber (sliced length wise, about 1/8 in thick), in center
One slice roasted red pepper, marinated (buy them in a jar at your grocery store)
3 cherry tomatoes, sliced in half, lengthwise and lined down center
4 fresh snow peas, lined down center
2-3 fresh basil leaves, optional
1/2-1,tsp flavored feta cheese, (I use tomato basil-yum!), sprinkled overtop
And ROLL it up! Enjoy!
**can add roasted chicken if desired**
