I created this recipe, using what I had on hand… Which is how some of my “highest rated” recipes happen!
My kids rated this an 8 out of 10 and since they don’t give 10′s 🙂 due to principle alone, a score of 8 means that it was added to the “make again” list!

Kate’s Sausage Cacciatore
Ingredients:
2 tbsp olive oil
5-6 links of Mild Italian Sausage
16 oz of fresh or frozen whole green beans
1 cup of fresh or frozen snap peas
10 oz tri color peppers, cut into strips
1 tbsp minced garlic
2 cans diced tomatoes
1 8oz can of sliced mushrooms or fresh
1 cup of scallions, white and green, sliced thin
1 tsp dried oregano
3/4 cup white wine
Salt and pepper to taste
3 cups white rice, prepared
Directions:
In a large pot, heat oil and saute sausage until fully cooked and no longer pink. Remove sausage from pan.
Set aside to cool. Then slice into half inch slices.
In the same pan, combine all vegetables except the scallions and mushrooms. Saute until cooked, but still crunchy. Add the sausage, oregano and wine. Cover and cook for 30 minutes over medium high heat.
Add the mushrooms, onions, salt and pepper.
Cook for another ten minutes.
Serve with a side of white rice.
