I didn’t have rice crispies but I did have some leftover cereals, so with a little creativity, I came up with this recipe to surprise my kids who have recently requested rice crispy treats! They’ll no doubt love them even more! I do!
I combined a few recipes, changed and added a few things! Feel free to make cereal substitutions as needed.

2 1/2 cups Kashi Go Lean Crunch
2 1/2 cups Cascadian Farms honey nut O’s
1/4 cup Skor Bits (toffee bits)
1/4 cup mini peanut butter chips
1/4 cup shredded coconut
1/4 cup butter plus 1 tsp butter and butter paper
1 1/2 bags Kraft jet puffed mini marshmallows
Directions: Combine and mix first five ingredients in a large bowl, set aside.
Use teaspoon and butter paper to grease 9X11 baking dish thoroughly. Set aside.
Melt 1/4 cup butter in microwave. then pour it into a large microwave safe bowl, using spatula to spread butter around the entire bowl to prevent marshmallows from sticking (my secret trick:). Then pour marshmallows into bowl and place in microwave for five minutes, stirring with butter coated spatula, every minute. Microwave until smooth.
Immediately remove and combine well with cereal mixture. Spread into 9X11 pan with butter coated spoon.
Allow to cool. Cut into squares and serve!
